Chef Rishim Sachdeva brings the Delicious Autumn at Olive Bistro!

“Hey ‘TP’, now that you are saying Hyderabad is definitely one place to explore various restaurants and the food scenes around, then recommend me one restaurant, I must plan to visit soon, for an overall dining experience…”

Without a thought, TP replies with a confident smile, “Olive Bistro! It’s absolutely amazing. I mean that whole landscape, the food, the vibes…you would definitely love it.”

That conversation happened back in 2014 when I stepped in Hyderabad for the first time.

Fast forward, 6 months later, I finally made it to this place in Hyderabad in the early winter evening. And, as you step-in the premises of this landscape, you are in a different world, away from the hustle of the big city life, a quaint urbane gateway, surrounded by all greens, overlooking the Durgam Chevru lake. A brilliantly curated the whole restaurant design is a treat in itself. Speaking of perfection, right from the colour tones, to the choice of the furniture, each and every artefact, the cutlery, all the aesthetics have been taken care of minutely.

Every time we visit this place for dining, it’s a celebration in itself; the experience here brings the charm of Mediterranean dining.

Said that Olive Bistro, part of the Olive Group spearheaded by AD Singh, keeps its menu evolving from time to time. Offering an elite dining experience to its customers, this is definitely already a favorite for many.

With autumn around, as the nature takes its change of course in presentation, so does this. We have Chef Rishim Sachdeva internationally trained and experienced, who holds the legacy of an elaborate experience in the Food and Beverages industry of London.

Chef Rishim Sachdeva, Chef De Cuisine at Olive Bar & Kitchen, Mumbai & Olive Bistro, Hyderabad may have stumbled into the culinary world by virtue of a chance encounter with a bitter but delicious apricot at the age of six, but his transcontinental culinary journey is lined with milestones and accolades. Often called a raw-food fanatic, Chef Rishim has always pursued creative freedom that allows for experimentation and collaboration. Be it his introduction to the world of traditional French cuisine at Marco Pierre White’s Michelin starred ‘The Oak Room’, or his experience with Heston Blumenthal’s Fat Duck or blurring regional boundaries with his New Mediterranean menu at Olive Mumbai Chef Rishim’s creations are exciting and inventive. A minimalist, he believes that taking out an ingredient rather than adding one, usually improves the flavor of a dish.

With fellow other foodies who are known food columnists, food bloggers, and food photographers, I was invited to taste the New Autumn Menu for Olive Bistro, Hyderabad, finely curated by Chef Rishim. In the words of Chef, “the new menu focuses on the global palette, in which the raw materials are fresh, locally sourced and seasonal produce. It’s a variety of dishes from the European and Mediterranean lands, presented with a remarkable twist.”

What I have to say about the menu is, “the new autumn menu is the quintessential brilliance of classical cuisine from the European and the Mediterranean region, with the eclectic tease of the culinary extravaganza, to create a gastronomical memory for your taste buds and a peerless dining experience.”IMG_3759

The dishes are full of flavors yet subtle; light on appetite yet wholesome; an overall brilliance of culinary skills gone in the preparation of the food that feels exotic and comfort.

Among an array of appetizers, we were served 2 vegetarian and 5 non-vegetarian. The vegetarian starters were BBQ Cauliflower & Leek Flatbread and Funky Hummus & Smoked Falafel. I loved their hummus & falafel platter; which also comes with assorted pita bread. The

From the range of non-vegetarian starters, we were served Red Velvet Fried Chicken, Chipotle Chicken, Pork Ribs, Kefir Fish Limecake, and Pork & Plum. People who had the pork dishes, they loved Pork ribs which comes with sauteed veggies.

I loved the Red Velvet Fried Chicken that comes with Quinoa Tabbouleh ( a lebanese flavourful salad dressing). fried chicken with flavors of red velvet cupcake crumbs. Kefir Fish limecakes was well loved by other bloggers.

The main course has been crafted artistically. The options were Linguine Tomato and Burrata, Grilled Tenderloin, maple and Chipotle Grilled Roast Chicken, Slow Braised Lamb, Pork Belly Rice, and Roast Garlic Polenta.

One of my favorites, Linguine dish, which was very well cooked with flavors of smoked tomatoes and baby burrata, tossed in olive oil. A perfect Italian escape for the gastronomic traveller one might be. And, a great dish for the vegetarian in you. Next was slow braised lamb, served with mashed potatoes and other veggies, assorted with very much beetroot puree. The dish is so named for the fact that the lamb is slowly braised for 72 hours, that makes it juicy and tender. Chipotle grilled roasted chicken is definitely a great choice for the chicken lovers. Roast garlic polenta is definitely filling and flavourful, for this is served with vegetable ratatouille. While having this, if you are an Indian, this might remind you of a famous Indian snack! Adds Chef Rishim, “In this menu we have used a lot of home-made and fresh ingredients. We have made our own kimchi, homemade spices and used techniques such as braising, confit, sous vide”

For eating healthy on the mind, you have the fair choices of indulging yourself into fresh, in-house bread and salads, such as Burrata Salad and the classic Caeser with organic lettuce emulsion.

For desserts, we were graced by Chocolate Fondant, Tiramisu, Orange Creme Brulee and Salted Caramel Tart.

Chocolate fondant being the showstopper, Orange creme brulee was definitely the next. It’s divine to your sweet tooth. It’s pure love for the dessert lover.

Once a famous Irish poet William Allingham said, “Autumn’s the mellow time.”; at Olive Bistro, Chef Rishim has proved the statement with his culinary skills that fulfill your appetite and the taste buds with sheer pleasure of haute cuisine 🙂
